Cook quinoa according to package. Cool.
Lightly steam beets by placing in a microwave safe bowl, adding a small amount of water, covering with plastic wrap & microwaving on high for 1-2 minutes. Remove, drain & set aside to cool.
In a large bowl, combine the chopped red onion, cooled quinoa, cilantro, cooled beets , dressing & toss to combine
Serve chilled
