Quinoa Beet Salad


Ingredients

  • 1 cup uncooked quinoa, rinsed
  • 2 cups spiralized or diced beets
  • 1/2 bunch roughly chopped cilantro
  • 1 cup chopped red onion
  • 1/2 cup blush wine dressing

Instructions

  1. Cook quinoa according to package. Cool.

  2. Lightly steam beets by placing in a microwave safe bowl, adding a small amount of water, covering with plastic wrap & microwaving on high for 1-2 minutes. Remove, drain & set aside to cool.

  3. In a large bowl, combine the chopped red onion, cooled quinoa, cilantro, cooled beets , dressing & toss to combine

  4. Serve chilled
