In a large bowl, mix together the dry ingredients
In a medium bowl, whisk together the wet ingredients
Add the wet ingredients to the dry ingredients and gently stir, do not over mix
Let the batter rest for 5-10 minutes
Heat waffle iron and pour in batter
Close the lid and cook according to waffle iron directions
When waffles are done, remove and place on a cooling rack
Serve and enjoy!
Top with butter, a drizzle of maple syrup and pumpkin seeds, or anything else you enjoy!
