Meatloaf

Ingredients

  • 2 lbs ground turkey or chicken or a mix of both
  • 1 large egg
  • 1/3 cup panko breadcrumbs
  • 2 gloves minced garlic
  • 1/2 medium onion diced
  • 1 green pepper diced
  • 1 red pepper diced
  • 4 Tbsp ketchup
  • 2 Tbsp yellow mustard
  • 3 Tbsp coconut aminos or low sodium soy sauce
  • salt/pepper
  • 1/4 cup ketchup
  • 2 Tbsp packed brown sugar
  • 2 Tbsp coconut aminos

Instructions

  1. Preheat oven to 375 degrees

  2. Put all of the ingredients through the salt/pepper in a large bowl & mix until combined

  3. Form into a loaf in a lightly greased baking dish

  4. In a small bowl, mix together the last 3 ingredients, spread over the top of the prepared meatloaf

  5. Bake for 1 hour, or until cooked through

Recipe Notes

I used a combination of a lean ground chicken and a fattier ground turkey. Fat = moisture. I happened to have chicken that needed that to be used so I added it to the turkey.

Measurements are approximate. I came up with this receipt on a whim so I didn't measure anything but it came out so good I wanted to share it.
