Strawberry & White Chocolate Scones

Prep Time 15 minutes

Ingredients

  • 2 cups all purpose flour
  • 1 tbsp baking powder
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 6 tbsp diced cold butter
  • 1 heaping cup diced strawberries
  • 1 large egg
  • 2 tsp vanilla extract
  • 3/4 cup white chocolate chips
  • 5-7 tbsp half & half or light cream
  • decorative sugar optional

Instructions

  1. Preheat oven to 375 degrees & line a baking sheet with parchment paper 

  2. In a large bowl, mix together the flour, baking powder, sugar, & salt

  3. Add in the butter & using a pastry cutter or fork, break up the butter so it turns into a crumbly mixture 

  4. Gently stir in the diced strawberries, egg, vanilla & white chocolate chips

  5. Gently stir in 1-2 tablespoons of half & half or cream at a time until the batter comes together, it should be a bit sticky, do not over mix

  6. Scoop out heaping tablespoons of the batter onto the parchment paper lined baking sheet (an ice cream scoop was perfect for this)

  7. Sprinkle the tops of the scones with the decorative sugar

  8. Bake on the middle-upper rack for 15-20 minutes, depending on the size of the scones & depending on your oven 

  9. When done, remove from oven & let cool
  10. Serve warm
