Almond Cake

Ingredients

  • 3/4 cup unsalted butter softened
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 3/4 cup milk
  • 1 3/4 cup all purpose flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/3 cup almond meal
  • powdered sugar

Instructions

  1. Preheat oven to 350 degrees & spray pan with cooking spray

  2. In a large bowl, cream the butter, sugar, eggs & extracts with a hand mixer (not necessary but preferred)

  3. Gently stir in the milk

  4. In a small bowl, mix together the flour, salt, baking powder & almond meal 

  5. Add the dry ingredients to the wet ingredients & gently mix together just until combined. Do not over mix. 

  6. Pour batter into the prepared pan & bake for 40-45 minutes 

  7. Check with a toothpick for doneness 

  8. Set aside to cool for 15 or so minutes before flipping onto a cooling rack

  9. Dust the top of the cake with powdered sugar
