Almond Cake

I love Nordic Ware items. The link to the specific item is below. They are durable and the themes are just really nice for presentation purposes. The recipes that come with each item are spot on. The phrase “don’t mess with a good thing” is applicable here. All the Nordic Ware recipes I have tried have been literally perfect.

This is one of my favorites recipes of theirs. I love almond flavored desserts. I think almond flavors are especially nice during the holidays. You know how your taste buds seem to change along with the seasons? That right there is what I’m talking about!

The texture is slightly more dense than a regular cake and not as sweet (but still sweet, if you know what I mean!). If you serve shortly after cooling, you will find the outside is crispy and the inside soft and moist. The almond flavor is not over powering at all but you can definitely taste it. This is sure to be a hit at your next holiday gathering!

Almond Cake

Ingredients

  • 3/4 cup unsalted butter softened
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 3/4 cup milk
  • 1 3/4 cup all purpose flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/3 cup almond meal
  • powdered sugar

Instructions

  1. Preheat oven to 350 degrees & spray pan with cooking spray

  2. In a large bowl, cream the butter, sugar, eggs & extracts with a hand mixer (not necessary but preferred)

  3. Gently stir in the milk

  4. In a small bowl, mix together the flour, salt, baking powder & almond meal 

  5. Add the dry ingredients to the wet ingredients & gently mix together just until combined. Do not over mix. 

  6. Pour batter into the prepared pan & bake for 40-45 minutes 

  7. Check with a toothpick for doneness 

  8. Set aside to cool for 15 or so minutes before flipping onto a cooling rack

  9. Dust the top of the cake with powdered sugar
