Cook quinoa according to package directions. Set aside and let it cool.
In a large bowl, mix together the diced mango, chopped red onion, chopped cilantro, lime juice, minced jalapeno, oil, vinegar, honey & salt.
Taste at this point to see if you need more/less of anything.
Gently mix together the quinoa & the mango mixture.
Cover and store in the fridge until ready to eat. The longer it sits, the more the flavors come together.
