This was one of the first recipes I wanted to post here. It was one of those moments where in my mind I did something, and so I thought I actually did, but really, I didn’t! Crazy!

I realized this when I wanted to make it, went here to find it and wouldn’t you know, it wasn’t here! I did have it posted to a previous blog but totally forgot to move it over. Ugh.

So, here it is! I have also made it with diced red pepper, in addition to everything else, which is also really good! The minced jalapeno is optional. I like a little heat to balance out the sweetness.

Its a great side dish when the weather is warm. It’s refreshing and light. Goes great with grilled meats!

Like pretty much everything I make and post, there are no right or wrong ratios. Taste as you go and adjust amounts to YOUR liking 🙂 love cilantro? Add in more. Too sweet? Add in some more lime juice. This is one of those dishes where it’s hard to mess up.

Tropical Quinoa Salad

Ingredients

  • 3-4 cups cooked quinoa
  • 2 cups diced mango
  • 1/2 cup chopped red onion
  • 2 limes, juiced
  • 1/2 cup roughly chopped cilantro
  • 1 tbsp minced jalapeno
  • 1/4 cup oil
  • 1 tsp apple cider vinegar
  • 1 tbsp honey
  • salt to taste

Instructions

  1. Cook quinoa according to package directions. Set aside and let it cool.

  2. In a large bowl, mix together the diced mango, chopped red onion, chopped cilantro, lime juice, minced jalapeno, oil, vinegar, honey & salt.

  3. Taste at this point to see if you need more/less of anything.

  4. Gently mix together the quinoa & the mango mixture.

  5. Cover and store in the fridge until ready to eat. The longer it sits, the more the flavors come together.
