Healthy Pumpkin Waffles

 

Anyone who knows me, knows I have a special love of homemade waffles.  Luckily, my kids have this same love. They prefer my homemade waffles to anything else. Waffles are great made ahead, too. They freeze really well and toast up perfectly in the toaster oven. I often make large batches and freeze them. I just pull out one out in the morning, pop in the toaster and my kids have homemade waffles! You can do this with pancakes too!

We are big breakfast people in general. Weekends we usually cook up a huge breakfast with all of the fixings and it’s one of my favorite things!

I love just a good basic waffle but when fall comes around, of course I make lots of pumpkin waffles. The thing about waffles, though, is they aren’t exactly healthy. But they can be! I make this recipe using oat flour and there is only 3 tablespoons of added sugar! So you can enjoy waffles guilt free! The pumpkin spice flavor is mild and the waffles are soft on the inside and crisp on the outside.

As someone who loves waffles, this for me is the perfect pumpkin waffle recipe. I really hope you enjoy it as much as I do!

 

Healthy Pumpkin Waffles

Simple and super healthy, a perfect addition to your breakfast or brunch repertoire! 

Ingredients

  • 2 1/4 cups oat flour can make your own by blending oats
  • 1 Tbsp baking powder
  • 3/4 tsp salt
  • 2 tsp pumpkin spice
  • 2/3 cup milk I used unsweetened almond milk
  • 1/2 cup melted butter Alternatively can use melted coconut oil
  • 1/2 cup pumpkin puree
  • 3 Tbsp maple syrup
  • 1 Tbsp vanilla extract

Instructions

  1. In a large bowl, mix together the dry ingredients

  2. In a medium bowl, whisk together the wet ingredients

  3. Add the wet ingredients to the dry ingredients and gently stir, do not over mix

  4. Let the batter rest for 5-10 minutes

  5. Heat waffle iron and pour in batter

  6. Close the lid and cook according to waffle iron directions

  7. When waffles are done, remove and place on a cooling rack

  8. Serve and enjoy!
