Crock Pot Beef Stew

 

 

I’ll apologize in advance for the lack of quality photos! We have had a really dark and rainy week so it was really hard to capture any good natural light shots. But believe me, this recipe is a good one, despite that!

So here we go…

It’s fall so that means I have officially broken out my crock pot! One of my favorite cool weather dinners is beef stew. It’s got all the components to a hearty, comforting meal in one dish.

It’s just a classic comfort meal and I keep it super simple. There is no need to get fancy with it! This is great paired with my super easy drop biscuits!

 

Crock Pot Beef Stew

Ingredients

  • 1 lb stew beef
  • 1 16oz carton beef broth/stock
  • 2 cups baby carrots
  • 1 cup onion cut into large chunks
  • 2 cups baby potatoes halved
  • 2 tsp worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 Tbsp corn starch
  • 1/4 cup cold water or beef broth

Instructions

  1. In a large crock pot, add the first 10 ingredients, gently stir to combine

  2. Cook on low, 8-10 hours

  3. In the last hour, mix together the corn starch and cold water or beef broth

  4. Stir into the stew and cook on high for 1 hour
