Apple Chicken

 

 

Wanring, this is not my prettiest post!

I love a good roast chicken. Apple is a really great flavor pairing! This recipe is incredibly simple and the flavor is amazing.

We always seem to have a lot of apples on hand. This time of year especially because do all of the fall activities like apple picking. And cider. We seem to always have a jug of cider on hand this time of year.

I apologize for the lack of pretty photos. Life happens and sometime I just can’t fit that part in! Someday I’ll probably come back to update them! But trust my words, this is a great recipe!

 

 

 

Roast Apple Chicken

Ingredients

Chicken

  • 1 3-4lb roasting chicken
  • 2 apples, cut into large chunks any kind but I prefer macintosh
  • 1 medium onion, cut into large chunks
  • 1 Tbsp softened butter
  • salt
  • pepper
  • 2-3 cups apple cider

Gravy

  • 2-3 Tbsp corn starch
  • 1/4 cup water or apple cider
  • pan drippings

Instructions

Chicken

  1. Preheat oven to 450 degrees

  2. Empty out roasting chicken and place chicken breast up in a roasting or baking dish, pat dry

  3. Sprinkle the inside of the chicken liberally with salt

  4. Stuff the chicken with the onion and apple chunks

  5. Sprinkle leftover apple and onion in the baking dish around the chicken

  6. Rub the softened butter on the chicken and sprinkle on salt and pepper

  7. Pour the apply cider into the pan, it should be roughly 1-2 inches deep

  8. Bake uncovered at 450 degrees for 10-15 minutes

  9. Reduce temp to 350 and bake for 20 minutes per pound

Gravy

  1. When the chicken is done, transfer the liquid from the pan to a sauce pot/pan and bring to a boil

  2. In a small cup or dish, mix the corn starch and water/apple cider together

  3. Add to the boiling liquid and stir until thickened

  4. Remove from heat

  5. Serve immediately

Recipe Notes

I prefer to not use a rack in my roasting pan/baking dish. I think the meat gets more flavor sitting in the liquid
