Healthier Double Chocolate Muffins

One of my 5 year olds favorite breakfast foods is chocolate muffins. Particularly McDonalds (yes, they do have muffins at ours!). I don’t blame him one bit. They’re good. But not exactly something I want him eating often. So I save those for special treats.

It did inspire me to make my own chocolate muffins. Healthier ones I could give them to him guilt free knowing what was in them, having control over the sugar content, etc. They have made a great addition to his lunch box and it’s even a good breakfast item for busy mornings.

You’ll also notice, that the bulk of this is done in the blender. So not only are these healthy, they’re super easy to make. These are packed with lots of good ingredients. Avocado, zucchini… I assure you, your kids will have no idea that these contain vegetables. These do seem to cook longer than other muffin recipes. These are quite rich/dense thanks to the avocado. They’re worth it though!

Double Chocolate Muffins

Servings 12

Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 cup oat flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 2/3 cup maple syrup
  • 1 cup zucchini chopped/shredded, & patted with a paper towel
  • 1 avocado
  • 1 tsp vanilla extract
  • 1 large egg
  • 2 Tbsp milk
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 375 degrees

  2. In a large bowl, mix together the dry ingredients

  3. In a blender, add in all of the wet ingredients, plus the zucchini & avocado

  4. Blend until smooth

  5. Add the blended ingredients to the dry ingredients & gently stir to combine

  6. Fold in the chocolate chips

  7. Using a 12-muffin pan, line with cupcake liners & evenly distribute the batter between them

  8. Bake for 30 minutes or until cooked through; stick a toothpick in & they’re done when it comes out clean

  9. Set on a cooling rack & cool completely before eating
