Oat Pancakes

There’s no wordy intro to this post, sorry to disappoint 😉

I was simply in the mood for pancakes, needed to make pancakes for my kids to have for during the week & I wanted something a bit more nutritional/substantial than basic pancakes.

Even though this recipe is made with 100% oat flour, it doesn’t have a super oaty taste, if that makes sense. These are moist & fluffy. They turned out to be really balanced in flavor & texture.

Oat Pancakes

Servings 12 pancakes

Ingredients

  • 2 cups oat flour either buy already made or blend oats until flour texture is achieved
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp maple syrup honey or granulated sugar will work
  • 2 eggs
  • 1 cup milk any milk will work
  • 1 tsp vanilla extract
  • 1 tbsp oil or melted butter

Instructions

  1. In a large bowl, mix together the dry ingredients

  2. In a small bowl, whisk the eggs & then mix in the remaining wet ingredients 

  3. Gently mix the wet ingredients in the dry ingredients

  4. Heat griddle over med-low heat & lightly oil it

  5. Add 1/4 cup scoops of batter to the pan

  6. Cook until golden & bubbles start to form

  7. Flip & finish cooking until golden

  8. Serve & enjoy!

Recipe Notes

1/4 cup scoops of the batter will yield about 12 pancakes. If your batter appears too thick, gently add in a tablespoon of milk at a time.
