Does anyone else’s taste change depending on the season?! In the winter I crave warm, comforting foods. In the summer, I crave cool, fresh, bright flavors. It must not be just me. I came across a new salad dressing at a local market and bought it on a whim – Blueberry Balsamic Vinaigrette. I have loved every single Brianna’s dressing/marinade so I knew I would love this too. It just screamed ‘summer.’

Playing off the summer vibes, I knew I wanted to throw together a salad using this dressing. For ingredients, I knew this would have seasonal fruits. And what goes better with fruits than goat cheese. They just belong together. The creamy tart flavor balances out the sweetness from the fruit. For a crunch, I tossed in slivered almonds. I added in some shredded rotisserie chicken to make it a meal. Each component tastes like it just belongs. In each bite you get to experience so much texture and flavor.

Summer Berry Salad

Ingredients

  • 2 cups spring lettuce mix
  • 1/4 cup blackberries
  • 1/4 cup raspberries
  • 1/4 cup blueberries
  • 2 Tbsp goat cheese crumbled
  • 2 Tbsp slivered almonds
  • 1/2 cup cooked chicken shredded or cut up, I like rotisserie chicken for this
  • 2 Tbsp Blueberry Balsamic Dressing Can be subbed with any balsamic dressing

Instructions

  1. Top spring lettuce mix with all ingredients

  2. Gently toss to combine and enjoy!
