Strawberry Rhubarb Cobbler

My absolute favorite fruit pie is strawberry rhubarb. For as long as I can remember this has been my favorite. I have been really wanting to make one, however, I’ve been strapped for time. I wanted something strawberry rhubarb just without all of the fuss/time a pie takes.

So, I figured I would try a cobbler. This was my first time making one. Definitely won’t be the last!

 It was so easy! I love that you can use any fruit you want so a cobbler can always be “in season.”

Strawberry Rhubarb Cobbler


Ingredients

  • 3 stalks rhubarb half inch slices
  • 2 cups strawberries sliced
  • 1 tbsp lemon juice
  • 1/2 tsp ground cinnamon
  • 1 tbsp sugar
  • 1 cup flour
  • 1 cup sugar
  • 1 cup buttermilk
  • 1 tbsp baking powder
  • pinch salt
  • 1 stick butter melted

Instructions

  1. Preheat oven to 375 degrees F.

  2. Toss sliced rhubarb & strawberries in a bowl with the lemon juice, cinnamon & 1 tablespoon of sugar. Set aside.

  3. In another bowl, combine the flour, 1 cup sugar, salt, baking powder & buttermilk. Stir just until everything is combined. Do not over stir.

  4. Pour the melted butter in a 9x13 or similar size baking dish.

  5. Pour the batter over the melted butter. Do not stir!

  6. Pour the sliced fruits over the batter. 

  7. Bake uncovered for 40-60 minutes, depending on your oven & baking dish.
