Easy Comfort Pasta

 

It’s funny that this is one of my favorite dishes. As a kid, I got frequent migraines. This dish was actually a trigger, among several others. Every time my mom made this, I ended up with a migraine when the house would start to smell like roasted vegetables. I could never actually eat any of it because I would get so sick.

Thankfully, I grew out of that!

Most all of the items in this recipe can be prepped in advance, making this a great dinner for even busy weeknights. Roast that garlic up over the weekend & store in the fridge. Get those vegetables washed up & sliced while you’re at it. Then when the time comes all you need to do is roast up the vegetables, cook the pasta & toss everything together.

 

 

Easy Comfort Pasta

Quick, easy comfort dish great for spring fall & winter! Great way to use ingredients usually always on hand.

Ingredients

  • 2 bell peppers red, yellow, or orange- a mix is best
  • 2 carrots
  • 1 head garlic
  • pasta of choice
  • 1 cup parmesan cheese freshly grated
  • 4 tbsp olive oil
  • parsley to garnesh
  • salt/pepper to taste

Instructions

  1. Slice off the top of the head of garlic, drizzle with 1 tbsp. of olive oil, a touch of salt & roast in a 400 degree F oven for about an hour

  2. In the meantime, slice the peppers & carrots into strips. Scatter on a baking sheet, drizzle with olive oil, & a bit of salt/pepper

  3. Toss to coat

  4. Place in 400 degree F oven & roast for about 30 minutes - until they are softened & have some char on them

  5. Cook your pasta according to the package directions, drain & set aside in a large serving bowl

  6. When the garlic is done roasting, squeeze out the gloves & roughly chop or just add them as it- but be sure to break them up a bit with the spoon when you stir them in the pasta

  7. Toss the vegetables & garlic with the pasta. Drizzle over some olive oil. Top with lots of fresh grated parmesan cheese & garnish with parsley
