Strawberry Scones
These strawberry scones are light, delicate and sweet. Scones are one of my favorite baked items, they’re like a cross between a biscuit and a muffin. Super versatile- you can pretty much add anything to them and there’s a good chance they will come out great!
Jump to RecipeThese particular scones make a great treat or dessert. My husband had his with ice cream. It’s almost like an all in one strawberry shortcake. Just add ice cream and you have a yummy dessert! They were even great cold throughout the week. I actually prefer cold scones, for some reason.
I had originally made these a couple summers ago after a strawberry trip. We had so many strawberries I didn’t know what to do with all of them! This is a great recipe for the summer when strawberries are in season, as a nice after dinner treat.
Strawberry & White Chocolate Scones
Ingredients
- 2 cups all purpose flour
- 1 tbsp baking powder
- 1/4 cup granulated sugar
- 1/2 tsp salt
- 6 tbsp diced cold butter
- 1 heaping cup diced strawberries
- 1 large egg
- 2 tsp vanilla extract
- 3/4 cup white chocolate chips
- 5-7 tbsp half & half or light cream
- decorative sugar optional
Instructions

Preheat oven to 375 degrees & line a baking sheet with parchment paper

In a large bowl, mix together the flour, baking powder, sugar, & salt

Add in the butter & using a pastry cutter or fork, break up the butter so it turns into a crumbly mixture

Gently stir in the diced strawberries, egg, vanilla & white chocolate chips

Gently stir in 1-2 tablespoons of half & half or cream at a time until the batter comes together, it should be a bit sticky, do not over mix

Scoop out heaping tablespoons of the batter onto the parchment paper lined baking sheet (an ice cream scoop was perfect for this)

Sprinkle the tops of the scones with the decorative sugar

Bake on the middle-upper rack for 15-20 minutes, depending on the size of the scones & depending on your oven

When done, remove from oven & let cool

Serve warm
