We love pancakes. There’s no denying that.

Pancakes shouldn’t be complicated. They should be exactly as the name sounds- pan-cakes. Cakes cooked in a pan 🙂

Here is my tried and true recipe. They’re perfect on their own, simply topped with some butter and syrup. But they’re easy to dress up as well- add chopped up fruits, chocolate chips, or sprinkles. We even sometimes add mini marshmallows. So many yummy options that turn this into a special treat.

One thing I love to do is cook up a big batch on the weekend and freeze some. Frozen pancakes toast up perfectly in the toaster oven.

Simple Pancakes

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 8 pancakes

Ingredients

  • 1 cup all purpose flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 egg
  • 3/4 cup milk
  • 1 tsp vanilla
  • 1/4 cup melted butter

Instructions

  1. In a large bowl, mix together all the dry ingredients

  2. In a small bowl, mix together all of the wet ingredients

  3. Pour the wet ingredients into the bowl of dry ingredients and gently mix together, do not over mix!

  4. Heat a griddle over low heat

  5. Add 1/4 cup scoops of batter to the fully heated pan, flip when golden

Recipe Notes

Be careful about the temperature of your pan. If the temperature is too high, they will burn/cook too fast on the outside. Low and slow is the best way to cook pancakes.

I do not grease my pan. If using a nonstick pan, when they are golden, they will come right off the pan to flip.

If adding any option ingredients such as chocolate chips, fruits, etc. mix those in the dry ingredients before adding in the wet ingredients. Or else you run the risk of over-mixing your batter.
