Apple Cider Pancakes

It’s officially the first day of fall here in Massachusetts! It may be 90 degrees outside, but that won’t stop me from enjoying every bit of fall that I can.

I honestly haven’t been big into pumpkin/pumpkin spice this year, at least not yet. Maybe it’s the heat wave we have had here, I don’t know. But cold, crisp apple cider has been what I have been craving.

I took my Simple Pancake recipe and made some small changes to make these apple cider pancakes. The idea came to me randomly. I didn’t know if it was going to work. I didn’t google anything relating to apple cider and pancakes. I figured I would just take my tried and true pancake recipe and swap out the milk for the cider.

You must use apple cider, not juice. They are not comparable!

I may never eat another pancake again. Ok, that may be a bit of an exaggeration, but that is how good these are. Super fluffy, moist, not too sweet and the apple cider flavor comes through perfectly.

Apple Cider Pancakes

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 9 1/4 cup pancakes

Ingredients

  • 1 cup all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/2 tsp salt
  • 2 tsp sugar
  • 1 egg
  • 3/4 cup apple cider
  • 1/4 cup melted butter

Instructions

  1. In a large bowl, mix together the dry ingredients

  2. In a small bowl, whisk together the wet ingredients

  3. Gently mix the wet ingredients in with the dry ingredients

  4. Be careful to not over mix, stir as little as possible until everything is lightly mixed together

  5. Preheat griddle over low heat

  6. Add 1/4 cup scoops to the pan & flip when golden on the bottom & the top produces bubbles

  7. Serve & enjoy

Be careful to not over mix

Pancakes are best cooked low & slow, make sure to keep the pan on low heat
